Banana Bread/ Mug Cake

Review: This recipe is a fantastic snack for cooler winter days or just those lazy blankets and tea on the couch kind of days. 3.5/5 stars

 

Ingredients

Cooking spray

3 tbs flour

1 tbs + 1 tsp sugar

2 tbs brown sugar

1/8 tsp salt

1/8 tsp baking powder

1/8 tsp baking soda

1 egg (for vegans substitute egg with an additional 2 tbs of water, 1 tbs of oil and 2 tsp of baking powder)

1/4 tsp vanilla extract

1 tbs vegetable oil

1 tbs milk (or soymilk)

1 mashed banana

 

Steps:

  1. Spray entire inside of mug with cooking spray
  2. In mug, combine all dry ingredients (except banana)
  3. Stir in the egg
  4. Add milk, vanilla, oil and banana. Mix together
  5. Place in microwave for up to 3 minutes (check at regular 30-45 second intervals)
  6. From experience, the bread will be SUPER hot. Let it sit and cool in the mug for a few minutes
